TIME PLAN

Time plan for buffet at 1.00pm

Up to 2 weeks ahead:

Make the pastry for the mango tart (step 1). Store in the freezer.

Up to 3 days ahead:

Make the passionfruit curd for the Pavlova (step 5). Cover with plastic wrap and store in the fridge.

Up to 2 days ahead:

Make the pastry cream for the mango tart (Step 5). Store in the fridge.

Up to one day ahead:

Prepare the salmon for the bruschetta (step 1). Cover with plastic wrap and store in the fridge. Add the lemon juice to the remaining dill oil. Transfer to a jar with a tight fitting lid. Store at room temperature.

Make the spice mix for the turkey. Cover with plastic wrap and store at room temperature. Brine the turkey (steps 2 & 3). Store in the fridge.

Prepare the ham (steps 1-5). Cool. Cover with tea towels and store in the fridge. Store the skimmed glaze in a jar with a tight fitting lid in the fridge.

Toss the cauliflower with the spices (step 1). Cover with plastic wrap and store in the fridge. Make the vinaigrette for the cauliflower (step 3). Store in a jar with a tight fitting lid at room temperature.

Make the breadcrumb mixture for the beans (step 1). Cool and store in an airtight container at room temperature. Make the tomato confit for the beans. Cool and transfer to an airtight container. Store in the fridge.

Bake the tart shell for the mango tart. Cool. Cover tightly with plastic wrap and store at room temperature.

The night before:

Make the Pavlova (steps 1-4). Cool. Cover loosely with plastic wrap and store at room temperature.

10am

Finish the turkey (steps 4-11)

Midday

Take the ham out of the fridge.

Cook the beans for the gratin (step 2) and assemble the gratin (step 4).

40 minutes before serving

Roast and finish the cauliflower (steps 2, 4 & 5)

20 minutes before serving

Finish the salmon bruschetta (steps 2-5)

Cook the bean gratin (step 4)

Just before serving:

Warm the ham juices.

30 minutes before serving dessert.

Assemble the mango tart.

Finish the Pavlova (step 6)
